
Avocado and Bacon on Toast

Ingredients
- 1 ripe medium Avocado
- 4 thinly sliced Bacon
- 8 vine of tomatoes
- 40g light cream cheese
- 1 tsp coarse mustard
- 1 tsp honey
- Sea salt & fresh pepper
- 2 pieces of toasted rye bread
- Fresh cress
- Protein world coconut oil, melted

Method
- Preheat oven to 200 ºC.
- Cut the bacon into half, giving you 8 small slices. Cut the avocado in half, remove the stones and use a large spoon to scoop out the flesh in one pieces. Slice 4 wedges or half avocado. Gently wrap each avocado wedge in a piece of bacon and place on a lined baking sheet along with the tomatoes. Pour over the coconut oil and bake in the oven for 15 min.
- Make your honey mustard cream cheese by mixing together cream cheese, mustard, honey, salt and pepper. Toast your bread crispy, spread out the cream cheese in a generous layer then add the bacon wrapped avocado wedges and tomatoes.
- Top with a little fresh cress and enjoy!
