Caribbean Fish Stew

Ingredients

  • Fish mix (salmon, haddock, cod, prawns)
  • 1 x 400g can tomatoes
  • 2 large onions
  • 2 red peppers
  • 4-6 garlic cloves
  • ½ cup chopped fresh parsley
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp coconut oil
  • 1 tbsp paprika
  • 1 tbsp cayenne pepper

Method

  • In a large pan, heat the coconut oil over a medium heat. Add the rest of the ingredients except the fish.
  • Bring the mixture to a rapid boil, then lower the flame and let it cook for 15 minutes.
  • You may have to stir once or twice. Add the fish and cook further for 10 minutes until the fish is fully cooked.
  • Turn the heat off when the fish is cooked through and serve with rice.
  • Serves 3
