
Caribbean Fish Stew

Ingredients
- Fish mix (salmon, haddock, cod, prawns)
- 1 x 400g can tomatoes
- 2 large onions
- 2 red peppers
- 4-6 garlic cloves
- ½ cup chopped fresh parsley
- 1 tsp black pepper
- 1 tsp salt
- 1 tbsp coconut oil
- 1 tbsp paprika
- 1 tbsp cayenne pepper

Method
- In a large pan, heat the coconut oil over a medium heat. Add the rest of the ingredients except the fish.
- Bring the mixture to a rapid boil, then lower the flame and let it cook for 15 minutes.
- You may have to stir once or twice. Add the fish and cook further for 10 minutes until the fish is fully cooked.
- Turn the heat off when the fish is cooked through and serve with rice.
