
Carrot Cake Pancakes

Ingredients
- 4 scoops PW slender pancakes
- 100ml unsweetened almond milk
- 1 tsp cinnamon
- 1 handful blackberries
- 1 tbsp coconut oil
- 2 tbsp maple syrup
- 1 cup carrots, finely grated
- Handful of walnuts
- 1 tbsp cream cheese or yoghurt (optional)

Method
Add 4 scoops of slender pancakes and 100ml of almond milk to a bowl and whisk until thick.
Add the grated carrot, walnuts and tbsp of maple syrup to the mixture and mix in slightly.
Heat coconut oil in a pan before adding the mixture.
Cook pancakes on each side until golden brown.
Drizzle remaining maple syrup on pancakes before serving. Add cream cheese or yoghurt (optional).
