Chicken Rocket Pizza





1 small chicken breast, sliced
2 tbsp tomato passata
1 small handful rocket leaves
1 medium sweet potato peeled
1 tbsp olive oil
2 round whole meal pita breads
30g feta cheese

1. Preheat oven to 200 degrees and line a baking tray with baking paper
2. Heat 1 tbsp olive oil in a frying pan over a low heat
3. Add the onion and cook slowly until soft and golden
4. Add the honey and balsamic vinegar and cook for a further 5-10 minutes or until
sticky, set aside to cool
5. Place the sweet potato on the baking tray and drizzle with ½ tbsp olive oil, roast in
the oven for 10 minutes until tender, set aside
6. Heat 1 tbsp olive oil in a frying pan on medium heat. Add the chicken and cook for 5
minutes or until just cooked through.
7. Reduce the oven temperature to 180 degrees
8. Lay the pita breads on a clean work surface and spread over the passata
9. Sprinkle the caramelised onion over the pitta bread and top with chicken, sweet
potato and feta
10. Place the pitta breads onto the second baking tray and place into the oven to bake
for 8 minutes
11. To serve, top the pizzas with rocket, salt and pepper to taste
