
Chicken Satay Skewers

Ingredients
- 6 tbsp peanut butter
- 1 tbsp soy sauce
- 1 garlic clove, crushed
- 1 tsp fresh ginger, grated
- a little fresh red chilli cut very finely
- 2 tbsp lime juice
- 1 tbsp rice or cider vinegar
- 1 tbsp honey
- 1 1/2 tsp ground turmeric
- 4-6tbsp water
- 400g chicken breasts cut into chunks
- 2 tsp coconut oil

Method
- Mix all the marinade ingredients together then reserve half
- Marinade the chicken in the other half for a few hours if you have time
- Put onto skewers and drizzle with coconut oil
- Grill for 7 minutes each side or oven cook at 220°C for about 20 minutes. Serve with the remaining dip and a crisp salad.
