
Cookies & Cream Ice Cream Sandwiches

Ingredients
125g cashews
70g ground almonds
4 scoops Protein World Cookies & Cream Slender Blend protein powder
4 large dates, pitted
1/2 tsp vanilla extract
1/4 tsp sea salt
2 tsp cocoa
Splash of water
250g low calore ice cream of your choice

Method
Blend all the ingredients except the ice cream in a food processor until mixture resembles cookie dough, adding just enough water for it to come together. (don't over process and make nut butter!). If it gets too wet, add a bit more protein powder or ground almonds until firm. Chill for at least thirty minutes.
Using wet hands, shape into 12 flat circles. Place on a small tray covered with greaseproof paper and freeze until firm.
Use the cookies to make sandwiches with softened ice cream. Either refreeze for later or eat straight away.
