
Crustless Quiche with Pea, Mint and Feta

Ingredients
- 8 large eggs
- 200g peas (defrosted)
- 2-3 mint leaves finely chopped
- 150g spinach
- salt and pepper
- 100g cubed feta
- 100ml milk of choice

Method
- Preheat oven to 200 degrees
- Lightly grease an 8inch tin with coconut oil
- Lightly whisk the eggs and add the milk
- Add the peas, feta and mint to the mix and season with salt and pepper
- Pour mix into the tin and bake for around 20-25 minutes until golden and bubbly
- Leave to cool slightly, then slice into 4 wedges and serve with a side of fresh salad
