Crustless Quiche with Pea, Mint and Feta

Ingredients

  • 8 large eggs
  • 200g peas (defrosted)
  • 2-3 mint leaves finely chopped
  • 150g spinach
  • salt and pepper
  • 100g cubed feta
  • 100ml milk of choice

Method

  • Preheat oven to 200 degrees
  • Lightly grease an 8inch tin with coconut oil
  • Lightly whisk the eggs and add the milk
  • Add the peas, feta and mint to the mix and season with salt and pepper
  • Pour mix into the tin and bake for around 20-25 minutes until golden and bubbly
  • Leave to cool slightly, then slice into 4 wedges and serve with a side of fresh salad
