
Cucumber Salmon and Avocado

Ingredients
- Shredded smoke salmon
- 1 cucumber
- 1 avocado
- 1 table spoon coconut oil (melted)
- Juice of 1 lime
- Salt and pepper to taste
- (Makes around 15)

Method
- Peel the skin from the cucumber using a potato peeler and throw away
- Using the peeler, peel long thick strips off the cucumber lengthways (stick to the outside of the cucumber as towards the middle is too soft)
- Roll each slice into a tight circle
- Peel the avocado and slice into small tight cubes, wrap with a piece of shredded salmon and place one cube into the centre of each cucumber roll
- Once all rolls are complete drizzle with olive oil, lime juice and salt and pepper
