
Flaxseed Flapjack

Ingredients
- 50g dates
- 50g apricots
- 100g raisins
- 125g oats
- 30g flax seed powder
- 20g chia seeds
- Juice and grated zest of 1 lemon
- 1 tbsp honey/ agave syrup
- 3 tbsps rapeseed oil

Method
- 1. Line a rectangular baking tray with grease proof paper
- 2. Chop the dates and apricots into small pieces
- 3. Add the rest of the ingredients and mix into firm dough ball (you can do this whole process by pulsing it in a food processor if you have one)
- 4. Empty out onto the baking tray and press it down and into the corners until it is even
- 5. Pop in the fridge for an hour then cut into squares and store in an airtight container
- Serves 8
