Grilled Honey Chicken Skewers

Ingredients

  • 1 tbsp coconut oil
  • ¼ cup honey (preferably manuka)
  • ¼ cup soy sauce
  • Tsp black pepper
  • 8 skinless chicken breast, cut into cubes
  • 2 cloves garlic
  • 5 small onions
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 courgette
  • Cherry tomatoes
  • Chopped coriander

Method

  • Mix together the coconut oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kebabs while cooking. Place the chicken, garlic, onions, peppers, courgette and tomatoes in the bowl, and marinate in the refrigerator for around 2 hours
  • Preheat the grill on a high heat.
  • After 2 hours drain the marinade from the chicken and vegetables and then place alternately onto skewers.
  • Place the skewers on the grill. Cook for 12 to 15 minutes. Turn and brush with reserved marinade frequently.
  • Serve and top with chopped coriander, your choice of healthy dip and a salad.
