
Grilled Honey Chicken Skewers

Ingredients
- 1 tbsp coconut oil
- ¼ cup honey (preferably manuka)
- ¼ cup soy sauce
- Tsp black pepper
- 8 skinless chicken breast, cut into cubes
- 2 cloves garlic
- 5 small onions
- 1 red bell pepper
- 1 yellow bell pepper
- 1 courgette
- Cherry tomatoes
- Chopped coriander

Method
- Mix together the coconut oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kebabs while cooking. Place the chicken, garlic, onions, peppers, courgette and tomatoes in the bowl, and marinate in the refrigerator for around 2 hours
- Preheat the grill on a high heat.
- After 2 hours drain the marinade from the chicken and vegetables and then place alternately onto skewers.
- Place the skewers on the grill. Cook for 12 to 15 minutes. Turn and brush with reserved marinade frequently.
- Serve and top with chopped coriander, your choice of healthy dip and a salad.
