Grilled Spicy Steak With Black Bean Salad

Ingredients

  • 2 Sirloin Steaks
  • ½ cup cooked black beans, rinsed and drained
  • 1 cup Quinoa
  • 1 ½ cups Baby Spinach leaves, washed
  • 1 chopped Red Bell Pepper
  • ½ Red Onion, sliced
  • ½ peeled avocado, thinly sliced
  • ½ teaspoon Sea Salt
  • 2 tbsp  Protein World Coconut Oil
  • ¼ tsp chilli powder
  • 1 garlic clove, finely chopped
  • ½ tsp Ground Cumin
  • ½ tsp honey
  • 1 tbsp Tamari sauce
  • 2 tbsp red wine vinegar
  • ¼ cup coriander, chopped
  • Pepper to taste
  • ¼ cup feta cheese (optional)

Method

  • In a bowl, mix 1 tsp coconut oil, chilli powder, chopped garlic, ¼ tsp salt and black pepper – then add the steaks and and rub evenly to season
  • Heat a grill pan and add steaks to pan – cooking to desired wellness (e.g. medium / well done). Once cooked remove, and leave to stand
  • Cook the quinoa and black beans following the pack instructions, and drain thoroughly
  • Add the quinoa and beans to the pepper, onions, spinach and coriander in a bowl, then pour over the dressing and mix.
  • Slice the steak into thin strips and place on top of the salad, with the sliced avocado. Sprinkle with Feta (if desired).
