Kale, Avocado, Eggs on Rye

2 cups kale, chopped

2 eggs

1 avocado

2 slices rye bread

1 pinch of salt

1 pinch of pepper

1 tbsp lemon juice

Smash avocado and add lemon, salt and pepper.

Rinse the chopped kale leaves and boil in a saucepan for 5 minutes.

Meanwhile, poach eggs for 2-3 minutes.

Layer the rye bread with the smashed avocado, followed by the cooked kale and poached egg. Serve hot.
