
Marinated Mango Chilli chicken

Ingredients
For the chilli sauce
- 1 ripe mango
- squeeze of half lime
- 2 tbsp hot chilli sauce
- 1 inch ginger, grated
- 2 tsp soy sauce
- 2 garlic cloves, crushed
- 1 tsp fresh coriander
- Pinch of salt and pepper
For the chicken
- 4 chicken breasts, chopped
- 1 egg, beaten
- 2 tbsp coconut or almond flour
- tsp salt and pepper
- 1 tsp Protein World Coconut oil

Method
- For the sauce
- Puree the mango chili sauce
- In a medium sized saucepan, add the mango along with the rest of the ingredients. Pour 1 cup of water and bring to the boil. Let it simmer for around 20 minutes. Add a pinch of salt and pepper if required.
- Set aside to thicken up
- For the chicken
- Marinate the chicken with egg, flour, salt and pepper for around 30-60 minutes.
- Heat a large non stick frying pan with the coconut oil. Add the marinated chicken and fry until golden and crispy.
- Pour the sauce in a big dish, drop the fried chicken and mix it up with sauce until well coated.
- Serve with a sprinkle of fresh coriander and sauce on the side.
