Miso Salmon Skewers

Ingredients

1 large salmon fillet, cut into chunks (2-3cm)          

2 spring onions, cut into lengths (2-3cm)

1 tbsp miso paste

1 tsp honey

½ tbsp soy sauce

1 tsp sesame seeds

½ cup brown rice

2 spears broccoli

Method

Thread the salmon chunks alternating with the spring onion on to 2-3 metal skewers.

Whisk the miso paste, soy sauce and honey into a marinade.

Turn the skewers in the marinade and leave for 15 minutes to marinate.

Cook brown rice for 30-40 minutes or until cooked.

Meanwhile, heat a grill and cook skewers for 15 minutes or until cooked on both sides.

Once cooked, remove the skewers from the grill, brush them with the marinade and sprinkle on sesame seeds.

Steam broccoli for 5 minutes.

Serve the skewers with side of brown rice and broccoli.
