No Bake Apricot And Ginger Bars


  • 4 medjool dates
  • ½ cup dried apricots
  • 2 tbsp ground flax
  • ¼ cup whole almonds
  • 1 tbsp honey
  • 1 tbs heaped fresh grated ginger (use more or less to taste)
  • ½ cup oat
  • 1 tsp Protein World coconut oil

  • Place the dates in a cup of boiling water for 5 minutes until soft. Then add to a food processor along with the apricots, honey and coconut oil and blitz for a few seconds until a sticky paste forms. Add the flax, stevia, ginger and almonds and pulse the mixture until the almonds are broken into coarse chunks. Add the oats and pulse gently to mix through without breaking them up too much.
  • The mixture should be firm but not sticky, add a few extra oats if necessary.
  • Press the mixture into the bottom of a small lined tin and chill for an hour or so before slicing into squares
  • Makes 6 bars
