Ingredients:

Salad:

- 1 large courgette, spiralized or chopped 

- 1 handful pea shoot sprouts, or sunflower sprouts

- 200g edamame, pre cooked or cook according to package directions

- 1 avocado, sliced

- 4 cups spinach 

- 2 tbsp hemp seeds

Dressing:

- 2 tbsp Protein World coconut oil, melted 

- ½ cup chopped parsley 

- ½ cup chopped basil leaves

- 1 tbsp dijon mustard

- juice of 1 lemon 

- salt & pepper to taste

Method

Instructions:

- Arrange all the salad ingredients in a bowl.

- Blend all the dressing ingredients together in a blender. Pour onto the salad and serve.
