Ingredients

  • 1 cup cranberries
  • 1 tbsp orange or lemon zest
  • 1 tbsp PW maple syrup
  • 2 turkey breasts
  • ½ tsp thyme
  • 1 tsp rosemary
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup sweet potato cubed
  • 1 tbsp coconut oil
  • 1 tsp cinnamon

Method

Preheat oven to 180 degrees.

Season the turkey breasts with thyme, rosemary, salt and black pepper.

Put the turkey in a roasting pan/ tray in the oven and cook for 1 hour

Meanwhile, add ½ cup of cranberries, orange or lemon zest, maple syrup and 2 tbsp of water to a saucepan and cook on low heat for 10 minutes, and stir.

After 10 minutes, increase heat and cook until the cranberries burst. Add remaining cranberries and cook for further 2-3 minutes.

Once turkey has cooked for an hour, remove from oven and pour cranberry sauce on or around the turkey breasts. Place back in the oven for 30 minutes

Meanwhile, add sweet potatoes to a separate roasting tray. Drizzle coconut oil, sprinkle 1 tsp of cinnamon, add pinch of salt and pepper then cook for 25 - 30 minutes.

Remove turkey and sweet potatoes from the oven once they are cooked. Slice turkey before serving with the cranberry sauce and sweet potatoes. Serve with your favourite veggies.
