
Slender Banana Bread

Ingredients
- 1 tsp coconut oil for greasing
- 2 scoops vanilla slender blend
- 3 ripe bananas
- 3 eggs
- 1 cup almond flour
- 3 tbsp of honey
- ½ tsp baking soda
- ½ tsp baking powder
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- Pinch of salt
- Topping
- Thinly sliced banana

Method
- Preheat the oven to 180c and lightly grease a 20 x12.5 cm oven proof loaf tin
- In a large bowl mash together the bananas with a fork. In a separate bowl whisk together the rest of the ingredients (eggs, flour, protein powder, honey, vanilla extract, baking powder, baking soda, cinnamon and salt).
- Once all combined mix in the mashed banana.
- Pour the mixture into the tin and smooth with a spatula. Add the sliced banana on top and bake for 45-50 minutes or until a knife inserted into the centre of the cake comes out clean.
- Remove from the oven and cool in the tin for a few minutes, then turn on to a wire rack to cool completely before serving.
- Cut and enjoy!
