Slender Banana Ice Cream Cups


  • 6 Bananas
  • 4 scoops Vanilla Slender Blend
  • ½ cup mini chocolate chips

  • Peel and slice the bananas into segments then place on a baking tray lined with parchment paper
  • Cover with cling film and place in the freezer for 1-1 ½ hours
  • Remove from the freezer and allow to stand for 5 minutes to soften but not defrost
  • Place in a blender with vanilla slender blend and pulse until smooth and creamy. Stir in the chocolate chips.
  • Grease a muffin tray with coconut oil and scoop the banana ice cream into each cup, sprinkling a few extra chocolate chips onto the tops
  • Place in the freezer for 1 hour to set
  • Once set and ready to eat pop each ice cream bite out carefully with a knife, and allow to warm for a few minutes before eating!
