Ingredients

  • 1 zucchini, spiralized 
  • 1 beet, spiralized
  • ½ cup red cabbage, shredded
  • ½ cup edamame 
  • 1 cup quinoa, cooked according to package directions
  • 2 radishes, sliced
  • 1 avocado, sliced

    Dressing: 
  • 1 tbsp Protein World coconut oil, melted
  • juice of 1 lime
  • 1 tsp honey
  • ½ tsp dijon mustard 
  • salt & pepper to taste

Method

  • Arrange all the salad ingredients in piles in your bowl, or alternatively toss all together. 
  • Mix the coconut oil, lime, honey, dijon, salt and pepper together in a mixing cup. 
  • Pour on top the salad.
