Sweet Potato And Courgette Fritters

Ingredients

  • 700g sweet potato
  • Coarsely grated 400g courgette
  • ½ chopped fresh coriander
  • 1 fresh red chilli
  • 8 Thinly sliced green onions
  • 1 cup almond or coconut flour
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp coconut oil
  • 4 eggs
  • squeeze of fresh lemon
  • 2/3 cups natural yoghurt
  • ¼ cup skimmed milk
  • Rocket salad

Method

  • Place the sweet potato, courgette, fresh coriander, red chili, and onions into a large mixing bowl. In a separate bowl, combine flour, ground coriander, cumin, eggs and milk, stir until smooth. Add the batter to sweet potato mixture. Stir until well combined.
  • Heat a tsp of coconut oil in a large non stick frying pan and place over a medium high heat. Spoon ¼ cup of mixture per fritter into the pan, 3 fritters at a time. Cook for 3 minutes each side, or until golden and cooked through.
  • Continue with remaining batter to make 15 fritters, adding the remaining coconut oil if necessary.
  • Serve with a squeeze of lime on top and a salad of your choice and yoghurt
