
Sweet Potato And Courgette Fritters

Ingredients
- 700g sweet potato
- Coarsely grated 400g courgette
- ½ chopped fresh coriander
- 1 fresh red chilli
- 8 Thinly sliced green onions
- 1 cup almond or coconut flour
- 2 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp coconut oil
- 4 eggs
- squeeze of fresh lemon
- 2/3 cups natural yoghurt
- ¼ cup skimmed milk
- Rocket salad

Method
- Place the sweet potato, courgette, fresh coriander, red chili, and onions into a large mixing bowl. In a separate bowl, combine flour, ground coriander, cumin, eggs and milk, stir until smooth. Add the batter to sweet potato mixture. Stir until well combined.
- Heat a tsp of coconut oil in a large non stick frying pan and place over a medium high heat. Spoon ¼ cup of mixture per fritter into the pan, 3 fritters at a time. Cook for 3 minutes each side, or until golden and cooked through.
- Continue with remaining batter to make 15 fritters, adding the remaining coconut oil if necessary.
- Serve with a squeeze of lime on top and a salad of your choice and yoghurt
