
Sweet Potato Fish Pie

Ingredients
- 150g of frozen fish or a your favourite fresh fish (salmon, cod, haddock)
- 3 sweet potatoes
- 40g peas
- 150ml milk
- 1 cube fish stock

Method
- 1. Either bake the sweet potato and scoop out the cooked flesh or peel, boil and mash
- 2. Poach the fish in the milk, along with the crumbled stock cube and bay leaf
- 3. Once cooked add the peas and stir through
- 4. Place the fish mixture into a dish and cover with the mashed sweet potato and place in the oven for 15-20 minutes
- Serve with vegetables such as broccoli, asparagus, kale.
