Toffee Apple Crumble


  • 5 apples peeled, cored & chopped
  • 1 tbsp honey/maple syrup
  • 1/2 tsp cinnamon
  • 1 tsp coconut oil
  • Juice of half an orange
  • 50g (5 yellow scoops) vanilla protein powder
  • 200g oats
  • 50g ground almonds
  • 5 tbsp coconut oil
  • 1 tbsp honey/maple syrup
  • 1 cup honey
  • 1 cup coconut cream
  • 1/4 cup water
  • pinch of salt

1. Put the apples and all other filling ingredients into a saucepan and cook until the liquid starts to caramalise and the apples soften 2. Mix all the dry ingredients for the crumble topping until combined, then add the coconut oil and rub together with your finger tips until you have a lovely light crumble 3.Place the apple filling into a dish and spinkle the crumble mixture on top - bake on a low temperature for 5 minutes until the crumble has browned (be careful it can colour very quickly!) 4.Whilst the crumble is cooking start your toffee sauce - add all your ingredients into a pan and heat on the hob until it turns a soft caramel colour (again keep an eye on it - can burn fast!)
