Zingy Shredded Chicken Stir-fry

Ingredients

  • 50g Mangetout
  • 50g finely sliced Carrot
  • 50g tenderstem broccoli
  • 2 chopped red peppers
  • 2 chopped red chillis
  • 1 spring onion
  • 90g chicken breast
  • Juice of 2 limes
  • 3 tbsp soy sauce
  • Handful of fresh coriander
  • 1 tsp coconut oil
  • 1 tsp honey
  • Handful of toasted pecans or cashews

Method

  • Heat the coconut oil in a wok and add the chicken, carrots, mangetout, spring onion, peppers, chillis and tenderstem broccoli. Stir-fry for 10 minutes.
  • In a bowl mix together the honey, soy and lime juice and add to the wok, allow to bubble for 30 secs, then add the pecans and cashews.
  • Mix well, heat through and sprinkle with coriander to serve.
