

NATIONAL CHILLI DAY MEXICAN RECIPES

It’s National Chilli Day! Just because you’re on a weight loss journey doesn't mean you can’t enjoy some Mexican delights! We’ve adapted our Protein World Pizza base to jazz up some Mexican classics!
Enjoy this lean chilli burrito bowl with up to 6 friends!

Burrito Bowl
Serves 6
Ingredients
• 480g PW Pizza Base
• 1 tsp olive oil
• 1 onion – finely chopped
• 3 cloves of garlic
• 1kg extra lean beef mince
• 2 tsp oregano
• 2 tsp paprika
• 4 tsp chilli powder (decrease if you are sensitive to spice!)
• 1 tsp cumin
• 2 tsp unsweetened cocoa powder
• 1 tsp Worcestershire sauce
• 500ml beef stock
• 250g red kidney beans
• 400g tinned chopped tomatoes
• 1 tbsp tomato puree

Method:
1. Heat the olive oil, onion, and garlic over a medium heat until the onion starts to become clear
2. Add the mince, break it up and cook until browned
3. Add the remaining ingredients, reduce heat and simmer for 30-40 minutes
4. While this is simmering, prepare the PW Pizza Mix dough. Roll out thinly and cut into 6 circles.
5. Grease the outside of 6 oven friendly cereal bowls, turn over and lay each circle on the bottom. Cook for 5 minutes.
6. Take off the dough bowls and cook on their own for a remaining 4-5 minutes until crisp
7. Once the chilli is cooked add inside the burrito bowl and serve with salad or brown rice!

Nachos
Simply cut up our pizza base into nacho shaped triangles and bake! Viola! Low calorie nacho chips.
Ingredients
• 80g PW Pizza Base
For the guacamole
• 70g avocado
• 1tsp lime juice
For the salsa
• 60g cherry tomatoes – finely chopped
• 1 tbsp red onion – finely chopped
• 1 tsp Red Chilli – finely chopped
• Salt & Pepper to taste
• Lemon juice to taste
Optional: Sour Cream

Method:
1. Prepare the PW pizza base as instructed on the packet
2. Roll out the dough thinly and cut into triangles
3. Place on greaseproof paper on baking tray and cook for 4 minutes
4. Flip nachos and cook for a further 4-6 minutes until crisp
5. Meanwhile mash together the avocado, salt & pepper and lime juice to make the guacamole
6. Combine the finely chopped tomatoes, onion, chilli, salt & pepper and add lemon juice to taste to make the salsa
7. Once the nachos are cooked, allow to cool, top with guac, salsa and cheese or use them as dips and enjoy!

Mexican Pizza
Okay so technically Pizza has Italian heritage but with these fajita toppings it will feel Mexican!
Ingredients
• 80g PW Pizza Base
• 80g grilled chicken breast
• 1 tbsp tomato puree
• Half a red pepper – finely chopped
• 35g avocado
• 15g fajita seasoning
Optional Toppings: Cherry Tomatoes, Rocket, Sour Cream

Method
1. Prepare the PW base as instructed on the packet
2. Coat the chicken in fajita seasoning
3. Add the tomato puree, chicken and pepper to the pizza and cook for a further 5 minutes
4. Add the avocado after cooking with optional sour cream.
