
Blueberry and Oat Breakfast Bar

Ingredients
- ½ cup Protein World coconut oil (melted)
- ¾ cup quinoa flour or almond flour
- ¾ cup rolled oats
- Pinch of sea salt
- ½ tsp freshly ground grated nutmeg
- 1 tsp ground cinnamon
- ½ tsp ground allspice
- ½ tsp bicarbonate soda
- 2 tbsp honey
- 1 large egg, beaten
- ½ cup blueberries
- ¼ cup dried cranberries (optional)

Method
- Preheat the oven to 160 C
- Line a 26 x 16cm cake tin with baking paper
- Melt the coconut oil in a small saucepan, then pour into a large bowl
- Put all the remaining ingredients apart from the blueberries and cranberries in the bowl and mix to a chunky batter
- Stir in the blueberries and cranberries
- Pour the mixture into the cake tin and spread to an even layer
- Bake in the oven for 20-25 minutes or until golden brown and set
- Transfer to a wire rack to cool
- After 10 minutes, cut into 8 bars, then leave to cool completely
- Serve and enjoy
