Blueberry and Oat Breakfast Bar

Ingredients

  • ½ cup Protein World coconut oil (melted)
  • ¾ cup quinoa flour or almond flour
  • ¾ cup rolled oats
  • Pinch of sea salt
  • ½ tsp freshly ground grated nutmeg
  • 1 tsp ground cinnamon
  • ½ tsp ground allspice
  • ½ tsp bicarbonate soda
  • 2 tbsp honey
  • 1 large egg, beaten
  • ½ cup blueberries
  • ¼ cup dried cranberries (optional)

Method

  • Preheat the oven to 160 C
  • Line a 26 x 16cm cake tin with baking paper
  • Melt the coconut oil in a small saucepan, then pour into a large bowl
  • Put all the remaining ingredients apart from the blueberries and cranberries in the bowl and mix to a chunky batter
  • Stir in the blueberries and cranberries
  • Pour the mixture into the cake tin and spread to an even layer
  • Bake in the oven for 20-25 minutes or until golden brown and set
  • Transfer to a wire rack to cool
  • After 10 minutes, cut into 8 bars, then leave to cool completely
  • Serve and enjoy
