Cajun Spiced Chicken & Butternut Squash

  • 2 boneless chicken breasts
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp garlic powder
  • 1 tbsp PW coconut oil
  • 1 butternut squash, peeled, cubed
  • ½ cup broccoli
  • 1 avocado
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp lemon juice

Cut chicken into small chunks and toss with paprika, cumin, garlic powder and pinch of coriander. Leave in a fridge for 20-30 minutes.

Preheat the oven to 200C. Arrange broccoli and butternut squash on a baking tray and drizzle with coconut oil and sprinkle with sea salt.

Arrange chicken on another baking tray and bake everything for 15 minutes.

Remove broccoli and chicken and bake butternut squash for further 10-15 minutes until tender and light browned.

Meanwhile, slice avocado, drizzle with lemon juice and sprinkle with salt and pepper.

Once butternut squash is cooked, serve all together.
