
Cumin Roasted Cauliflower

Ingredients
- 1 medium cauliflower
- 1 tsp coconut oil
- 1 tsp cumin powder
- Pinch of salt
- 3 tbsps lemon juice
- ½ bunch flat leaf parsley

Method
- Preheat Oven to 160 degrees C and line a baking tray with baking paper. Wash cauliflower and cut into florets and place in a bowl with melted coconut oil, cumin powder and salt. Toss to combine.
- Bake for 20 mins, turning cauliflower heads 1-2 times until caramelized. Remove from oven and place cooked cauliflower into a large bowl. Add lemon juice and finely chopped parsley, stirring through until evenly dressed.
- Serve as a side dish or add a source of protein to have as a meal.
