
Hoisin Turkey Lettuce Wraps

Ingredients
- WRAP
- 225g ground turkey
- handful of mushrooms, sliced
- 1/2 can water chestnuts drained and diced
- 1/2 large shredded carrot
- 2 spring onions
- 5 tbs reduced-sodium soy sauce
- 1 tablespoons hoisin sauce
- 1 tablespoon grated ginger
- 1 tablespoon water
- 1 teaspoons sesame oil
- 1 large head of lettuce, washed, dried and leaves separated
- DIPPING SAUCE
- 5 tbs soy sauce
- 1 tablespoons seasoned rice vinegar
- 1/2 tablespoon honey
- 1/2 teaspoon sesame oil
- 1 clove minced garlic
- 1/2 sliced red chilli

Method
- In a large pan, brown the ground turkey over medium-high heat, breaking up the pieces. Pour into a colander, in the sink and drain fat and return turkey to pan
- Add the spring onions, water chestnuts, mushrooms, carrot, soy sauce, hoisin sauce, ginger, water and sesame oil. Cook for a few minutes until the spring onions and carrots are soft
- In a small bowl, add all the dipping sauce ingredients and mix well
- To assemble each turkey wrap: Spoon about ⅓ cup of turkey filling onto one lettuce leaf and roll Serve with dipping sauce on the side
