
Quinoa Crusted Chicken Strips With Honey Mustard

Ingredients
- Chicken strips
- 2 cups cooked quinoa
- 3 skinless chicken breasts, cut into strips
- ½ cup coconut or almond flour
- 2 eggs
- 1 tsp black pepper & salt
- 2 tbsp coconut oil
- Honey mustard
- 1 tbsp Dijon mustard
- 1 tbsp mayonnaise
- 1/2 tablespoon lemon juice
- 2 tbsp honey
- Salt and pepper

Method
- Chicken strips
- Preheat the oven to 180 degrees.
- Add the quinoa to a pan of boiling water and cook for 10-15 minutes or until fluffy. Transfer to a bowl and leave to cool for 10 minutes.
- Spread the quinoa on a piece of baking paper. Sprinkle the coconut or almond flour over the quinoa.
- With your fingers tips, squeeze together the quinoa and breadcrumbs until the moisture of the
- quinoa is absorbed.
- Beat the eggs in a bowl. Sprinkle the chicken with salt and pepper.
- Dip the chicken in the egg and then into the quinoa mixture. Place onto a plate. Heat the coconut oil
- in a large pan over high heat.
- Add the chicken and reduce the heat to medium. Cook each side 4-5 minutes, turning once, until the
- crust begins to brown.
