Quinoa Crusted Chicken Strips With Honey Mustard

Ingredients

  • Chicken strips
  • 2 cups cooked quinoa
  • 3 skinless chicken breasts, cut into strips
  • ½ cup coconut or almond flour
  • 2 eggs
  • 1 tsp black pepper & salt
  • 2 tbsp coconut oil
  • Honey mustard
  • 1 tbsp Dijon mustard
  • 1 tbsp mayonnaise
  • 1/2 tablespoon lemon juice
  • 2 tbsp honey
  • Salt and pepper

Method

  • Chicken strips
  • Preheat the oven to 180 degrees.
  • Add the quinoa to a pan of boiling water and cook for 10-15 minutes or until fluffy. Transfer to a bowl and leave to cool for 10 minutes.
  • Spread the quinoa on a piece of baking paper. Sprinkle the coconut or almond flour over the quinoa.
  • With your fingers tips, squeeze together the quinoa and breadcrumbs until the moisture of the
  • quinoa is absorbed.
  • Beat the eggs in a bowl. Sprinkle the chicken with salt and pepper.
  • Dip the chicken in the egg and then into the quinoa mixture. Place onto a plate. Heat the coconut oil
  • in a large pan over high heat.
  • Add the chicken and reduce the heat to medium. Cook each side 4-5 minutes, turning once, until the
  • crust begins to brown.
