
Raw Toffee Slender Protein Bars

Ingredients
- 3 scoops vanilla Slender Blend
- 1 cup pecan nuts
- 1 cup cashew nuts
- 1 cup soft pitted dates
- 3 tbsp cacao nibs
- 3tbsp cocoa powder
- ½ cup Protein World coconut oil
- ½ cup cacao butter
- ½ cup almond milk
- Pinch of salt x 2

Method
- Soak pecans and cashews over night
- Toffee layer
- Blend pecans, cacao nibs and a pinch of salt at low speed
- Add dates to blender and pulse at low speed– keeping mixture a little chunky
- Chocolate Layer
- Gently melt coconut oil and and raw cacao butter and add to blender with soaked cashew nuts, honey, pinch salt, vanilla slender blend and almond milk – blend on high speed until smooth
- Pour 1/3 of the dough into a baking tray and place into a freezer for 15 minutes to set
- Remove from the freezer and spread the toffee pecan layer across the base
- To the remaining mixture add 3 tbsp cocoa powder and pulse through
- Place some pecan nuts on the top for decoration (optional)
- Spoon mixture on to the top of the other layers and place in the freezer to set for a further 1-2 hours
- Makes approx 16 bars
