As a cake fan himself, PW Nutritionist Omar has taken two bake off favourites and created healthier versions for us all to enjoy without the guilt! Well done Omar!

In a study of the UK, Lemon Drizzle was recently named the nations favourite bake overthrowing the popular Victoria Sponge. Because so many of you love Lemon Drizzle we’ve come up with a healthier alternative that won’t make you pile on the pounds!
Lemon Drizzle Flapjacks
Ingredients:
200g PW Flapjack Mix
50ml semi-skimmed milk
2 tbsp coconut oil
2 tbsp PW Maple Syrup
2 tsp lemon curd
1 lemon, juiced
Zest of 1 lemon
4 tbsp icing sugar, sieved
Instructions
Preheat oven to 180C. Melt 2 tbsp of coconut oil and line a baking tin with parchment paper.
Mix all ingredients except the icing sugar until well blended. Spread evenly in the baking tin.
Bake for 12 mins then leave to cool.
Melt icing sugar and drizzle across the cooled flapjacks.

Black forest gateaux is a favourite at this time of year, usually making an appearance at the buffet of a family Christmas get together. Why not try this calorie friendly version that won’t bust the belt and leave you to indulge in more of the liquid calories. It is party season after all!
Black Forest Brownies
Ingredients:
200g PW Brownie Mix
1 large egg
2 tbsp coconut oil
1/2 cup fresh cherries, pitted
4 tsp cocoa powder
1 tbsp icing sugar
100ml water
Instructions
Preheat oven to 180C. Melt 2 tbsp of coconut oil and line a baking tin with parchment paper.
Mix the egg, water, coconut oil and brownie mix until well blended. Add cherries and stir in.
Spread the mixture evenly into the baking tin.
Bake in the centre of the oven for 10-11 minutes or until a toothpick inserted in the centre comes out with moist crumbs attached.
Transfer the brownies into the fridge for at least 30 minutes before cutting and serving. To serve, dust the brownies with icing sugar and cocoa powder.
